Today I’m hitting you with another baking post! This time it’s a cake! Ok, so I know I said, in my last baking post that I’d be taking this baking thing, step-by-step, but I couldn’t find any good recipes that didn’t involve ingredients I had to buy. I wanted to make something easy, with the ingredients I already had. So, I scoured the internet, and compared recipes, and I came up with “this little slice” (shout-out if you get this reference!).
Anyway, today’s kitchen masterpiece is a lemon drizzle cake. It’s similar to the kinds you get at cafes and restaurants. I got this recipe from Yummly…my go-to apparently…and thought I’d try it out. You see, I didn’t just want to keep going with scones, or alfajores (which I need to bake again because they’re absolutely gorgeous for parties and as snacks), or cookies. I wanted something with a little zest in it, and I found this one. It’s equal parts sour and sweet, and I would definitely make it again! It’s a great dessert or snack for tea, and I would recommend it to all you amateur bakers out there!
It’s Party Time!
Ok, so this recipe is dead easy. It’s basically equal parts of flour, milk and eggs, with two lemons worth of zest and juice! Like I said, I got this recipe off Yummly, but the original came from a blog called The Londoner. When I read her description of why she’d baked this concoction, I realised I had the same sentiment! She was right, of course. While café treats are great, when you go, they can sometimes be too much, either they’re too sweet, too rich, too dense or just plain boring. At home, you don’t have that luxury, it’s either candy bars, or highly processed baked goods from the supermarket, and those can be a little too processed, if you know what I mean. So, baking is the only way to go, if you want those café quality treats, but at home.
That’s why, I decided to make this cake. As someone who’s starting to feel a little too aware that baked goods by supermarkets and wholesalers are saturated with chemicals that aren’t too good for our bodies, I wanted to make something that didn’t have any extra ingredients, I wasn’t aware of. I also wanted to make something that didn’t take up too much time, because my kitchen is always full of food that’s already been cooked (thank you mom!).
Ok, so what do I think about this recipe? I absolutely love it, and like my scones and alfajores, I’m going to try making it over and over again, so that, if ever I need to, I have something to bring to a party, or if ever I have guests over, I can just feed them these snacks. It’s not dense, and it isn’t too sour, bitter or sweet. It’s a perfect blend of all these tastes, and in all honesty, my family finished the entire thing within 2 days.
Now, again, this was my first attempt at the recipe, so I know it doesn’t look quite as perfect as the one in the picture, but it still looks pretty darn good if you ask me. It was just as perfectly brown as the picture, and as glisteningly glazed too. Again, I would highly recommend making this cake, if you’re a first-time baker, especially if you’re already tired of making biscuits and cookies. It’s a great way to step into the world of cakes since it’s probably one of the easiest recipes of a cake that’s out there.
